  • 1 tablespoon avocado oil
  • 2 pounds boneless, skinless chicken thighs or chicken breasts
  • 2 tablespoons fresh ginger, finely grated
  • 3 garlic cloves minced
  • ½ cup dry sherry (from the wine aisle, not cooking sherry)
  • 6 cups prepared chicken broth (I usually prepare mine with Better Than Bouillon Organic Reduced
  • Sodium Chicken Base)
  • 1 to 1 ½ teaspoons Diamond Crystal kosher salt or 1/2–3/4 teaspoon fine sea salt, plus more to taste
  • ½ teaspoon white pepper or freshly ground black pepper, or a combination
  • 5 to 6 cups baby bok choy, chopped
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
Optional for Serving
  • Warm jasmine rice
  • Sliced green onions
  • Chopped fresh cilantro
  • Chili crisp or chili oil
  • Fresh lime wedges
  • Toasted sesame seeds
  • Crispy shallots

Method

Sauté the aromatics.
  1. Select Sauté (Normal) on the Instant Pot.
  2. Add the avocado oil.
  3. Once hot, add the ginger and garlic and cook for 20 to 30 seconds, stirring constantly, just until fragrant.
Add the sherry.
  1. Pour in the dry sherry and simmer for about 1 minute, scraping up anything from the bottom of the pot.
Add the broth and chicken.
  1. Stir in the prepared chicken broth, kosher salt, and pepper.
  2. Nestle the chicken into the broth.
Pressure cook.
  1. Lock the lid and set the valve to Sealing.
  2. Cook on High Pressure for 10 minutes.
  3. Allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure.
Shred the chicken.
  1. Transfer the chicken to a cutting board or shallow bowl.
  2. Shred or chop it into bite-sized pieces.
Cook the bok choy.
  1. Select Sauté (Normal).
  2. Once the broth begins to gently simmer, add the bok choy.
  3. Cook for 2 to 3 minutes, just until the stems are tender and the leaves are bright green.
Finish.
  1. Return the chicken to the pot.
  2. Stir in the rice vinegar and toasted sesame oil.
  3. Taste and adjust the seasoning with additional salt or pepper if needed.
Serve.
  1. Ladle into bowls.
  2. Serve with warm jasmine rice and let everyone add green onions, cilantro, chili crisp, lime wedges, toasted sesame seeds, or crispy shallots as desired.
