Mediterranean Orzo Salad

Mediterranean orzo salad with gluten-free orzo, chickpeas, feta, roasted red peppers, artichokes, olives, and fresh basil.

When the weather is too hot to spend much time cooking, this Mediterranean Orzo Salad is one of my favorite meals to have waiting in the refrigerator.
It’s packed with tender gluten-free orzo, chickpeas, roasted red peppers, artichokes, sun-dried tomatoes, buttery Castelvetrano olives, creamy feta, fresh basil, and a tangy red wine vinaigrette that finds its way into every bite.
I love making this salad ahead because the flavors get even better after everything has had some time together in the refrigerator.
It’s substantial enough for an easy lunch, but it also works as a side with grilled chicken or another simple protein. And because it travels well, it’s one of those recipes I can make for a picnic, potluck, or summer gathering without giving it much thought.
One little thing I’ve learned from making gluten-free pasta salads is not to be shy with the dressing.
Gluten-free pasta can absorb quite a bit as it sits, so I intentionally make a generous amount of vinaigrette and start by adding about three-quarters of it.
After the salad is tossed, I can decide whether it wants the rest.
Usually it does.
That extra dressing helps keep the salad flavorful and bright even after it’s been chilling in the refrigerator.
And anything that makes tomorrow’s lunch something I’m genuinely looking forward to is a win in my book.

SUCCESS TIPS

  • Cook the orzo just to al dente.
  • The pasta will continue to absorb dressing and soften slightly as the salad chills.
  • Cooking it just to al dente helps it hold its texture.
  • Drain the jarred ingredients well.
  • Roasted red peppers, artichoke hearts, olives, and sun-dried tomatoes can bring quite a bit of extra liquid or oil with them.
  • Drain them well before adding them to the salad so they don’t dilute the vinaigrette.
  • Don’t be afraid of the dressing.
  • The vinaigrette should taste bright and well seasoned on its own.
  • Start with about three-quarters of it, toss everything together, and then decide if the salad needs the rest.
  • Give the salad time to chill.
  • At least an hour in the refrigerator gives the orzo time to absorb some of the vinaigrette and lets all of those flavors come together

Pasta
  • 1 package gluten-free orzo (Jovial, if available) (12-ounce / 340 g)
  • Diamond Crystal kosher salt for cooking the pasta
Salad
  • 1 can chickpeas, drained and rinsed (15-ounce / 425 g)
  • 1 jar roasted red peppers, drained and chopped (12-ounce / 340 g)
  • ¾ cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 can quartered artichoke hearts, drained well and chopped (14-ounce / 400 g)
  • ¾ cup Castelvetrano olives, halved
  • ½ small shallot very thinly sliced
  • ½ cup chopped fresh basil divided
  • 6 ounces block feta cheese, crumbled
  • ⅓ cup toasted pine nuts or chopped pistachios
Mediterranean Red Wine Vinaigrette
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons honey
  • 2 teaspoons Dijon mustard
  • 1 large garlic clove finely grated
  • 1 teaspoon dried oregano
  • ½ teaspoon Diamond Crystal kosher salt plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes
  • 1 tablespoon oil from the sun-dried tomato jar optional, but recommended

Method

Cook the orzo
  1. Bring a large pot of generously salted water to a boil.
  2. Cook the orzo according to the package directions until just al dente. Drain and rinse briefly under cool water, just until the steam disappears. Transfer the orzo to a large mixing bowl.
Make the vinaigrette
  1. In a small jar or bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, Dijon mustard, garlic, oregano, kosher salt, black pepper, red pepper flakes, and the reserved sun-dried tomato oil, if using.
  2. Taste the dressing before adding it to the salad. It should taste a little brighter and more seasoned than you think—it will mellow once it’s tossed with the pasta.
Assemble the salad
  1. Add the chickpeas, roasted red peppers, sun-dried tomatoes, artichoke hearts, olives, shallot, and about two-thirds of the basil to the bowl with the orzo.
  2. Pour about three-quarters of the dressing over the salad and toss until everything is evenly coated.
  3. Gently fold in the feta.
  4. If the salad looks like it can absorb more dressing, add the remaining vinaigrette until it reaches the consistency you like.
Chill
  1. Cover and refrigerate for at least 1 hour.
  2. Finish and serve
  3. Just before serving, gently toss the salad again and sprinkle with the remaining basil and the toasted pine nuts or pistachios.
  4. Serve chilled or at cool room temperature.

HELPFUL NOTES

  • Taste the vinaigrette before adding it to the salad. It should taste a little brighter than you’d expect since the orzo will absorb some of that flavor as it chills.
  • Let the salad chill for at least an hour before serving. That little bit of time helps all of the flavors come together.
  • For the best texture, wait to sprinkle on the toasted pine nuts or pistachios until just before serving so they stay crunchy.

FAQ

Yes. This is a great make-ahead salad, and I actually like it after it’s had a few hours to chill. If you’re serving it for a gathering, save some of the fresh basil and all of the toasted pine nuts or pistachios for the end.

Absolutely. If you don’t need the recipe to be gluten-free, regular wheat-based orzo can be substituted. Cook it just until al dente according to the package directions.

It’s substantial enough for an easy lunch, but it also makes a great side dish. Try it with grilled chicken, Air Fryer Honey Dijon Chicken, burgers, kabobs, or your favorite simple protein. It’s also great as part of a picnic or potluck spread.

Yes. You can leave it out or use a dairy-free feta-style alternative if you prefer. You may want to taste the finished salad and adjust the salt because feta contributes quite a bit of seasoning.

Yes. I especially like Castelvetrano olives because they’re mild and buttery. If you prefer a stronger, brinier olive, Kalamata olives are another option.

I don’t recommend it. The pasta, feta, herbs, and vegetables won’t have the same texture after freezing and thawing. This one is much better made fresh and stored in the refrigerator.

MAKE IT WORK

This recipe is easy to customize with what you have on hand.

  • Add protein: Grilled chicken, grilled shrimp, or rotisserie chicken all work well.
  • Make it dairy-free: Leave out the feta or use your favorite dairy-free alternative.
  • Try a different nut: Toasted sliced almonds or chopped walnuts are great if you don’t have pine nuts or pistachios.
  • Add more vegetables: Cucumber, cherry tomatoes, or baby spinach are delicious additions.

STORAGE

Store Mediterranean Orzo Salad in an airtight container in the refrigerator for up to 4 days. The orzo will continue to absorb the dressing during storage. Before serving leftovers, gently toss the salad and taste it. If it seems a little dry, add a small drizzle of extra-virgin olive oil or splash of red wine vinegar to freshen it up. For the best texture, store extra toasted pine nuts or pistachios separately and add them just before serving. Do not freeze.

MEAL PREP TIP

I love making this salad ahead because the orzo and chickpeas have time to absorb all that vinaigrette while everything chills. If I’m making it the day before, I stir most of the basil into the salad as written, but save some fresh basil and all of the toasted pine nuts or pistachios for serving. That way I get the flavor that develops overnight along with a fresh finish and a little crunch right before we eat. And then tomorrow’s lunch is already handled.

FROM MY PANTRY

These are a few of the pantry staples I used to develop this recipe. I reach for them again and again because they’ve been consistently reliable in my kitchen.

  • Jovial Gluten-Free Orzo – My favorite gluten-free orzo. It cooks up tender, holds its shape well, and works beautifully in pasta salads.
  • Diamond Crystal Kosher Salt – My go-to kosher salt for cooking and seasoning because it’s easy to control.
  • Extra-Virgin Olive Oil – Since the dressing is such a big part of this recipe, choose an olive oil you enjoy the flavor of.
  • Dijon Mustard – Helps create a smooth vinaigrette while adding just a little extra depth.
  • Red Wine Vinegar – Bright, tangy, and one of my favorite vinegars for Mediterranean-style salads.

FROM MY KITCHEN

These are the kitchen tools I used to make this recipe.

  • Large Mixing Bowl – Plenty of room to toss everything together without spilling.
  • Glass Measuring Cup or Jar – Perfect for whisking the vinaigrette.
  • Chef’s Knife – A sharp knife makes chopping all of the vegetables quick and enjoyable.
  • Cutting Board – I like using a large board so I have room to prep everything before assembling the salad.
  • Microplane – My favorite tool for grating garlic directly into the dressing.
