Bananas Foster Chia Pudding (Creamy Coconut Chia Pudding with Caramelized Bananas)

Creamy coconut chia pudding topped with caramelized bananas and nuts.
Delicious Bananas Foster Chia Pudding with caramelized bananas and coconut, perfect for a healthy dessert or breakfast.

If cozy breakfasts are your thing, this Bananas Foster chia pudding is a really good one to keep in the fridge.

It’s creamy, lightly spiced, topped with warm caramelized bananas, and feels both nourishing and a little fancy at the same time.

I first had the idea for this after seeing Bananas Foster French toast on a menu. It sounded incredible… but also very much not gluten-free.

So naturally, I came home and started thinking about how to recreate those same warm, caramelized banana flavors in a way that actually works in my kitchen.

This version is creamy, warm, and topped with glossy caramelized bananas that feel a little extra in the best possible way. It’s the kind of make-ahead breakfast that feels special without requiring much work in the morning.

The chia pudding can be made several days ahead, making it perfect for meal prep. When you’re ready to serve, simply warm the bananas and spoon them over the top.

I usually make this for holidays, slow weekends, or mornings when family is staying over because most of it can be prepped ahead. Which means I actually get to sit down and enjoy breakfast too instead of standing in the kitchen the whole time.

The combination of creamy chia pudding, warm bananas, buttery caramel flavor, and crunchy pistachios is so good together.

Based on the immediate:

“Wait… this is really good.”

and:

“Is there more?”

…I’d say this one’s a keeper.

If you’re building out a cozy breakfast spread, this pairs really well with gluten-free banana waffles, banana pancakes, or a batch of homemade maple granola.

How It Comes Together

Ingredients for Bananas Foster Chia Pudding with coconut and caramelized bananas.

1. Mix the chia pudding base.

Whisk together the coconut milk, non-dairy milk, maple syrup, vanilla, cinnamon, salt, nutmeg, and chia seeds until smooth and evenly combined.

Mixing bowl with coconut chia pudding, pistachios, and spices on dark wooden table.

2. Chill until thick and creamy.

After about 5 minutes, whisk the pudding again to break up any chia clumps.

Refrigerate for at least 3 hours or overnight until thick, creamy, and spoonable.

3. Caramelize the bananas

The butter, maple syrup, brown sugar, and spices cook into a glossy caramel-style sauce before the bananas are added.

As the bananas soften, they absorb all of that warm cinnamon-maple flavor and become rich, glossy, and caramelized around the edges.

This is where the cozy Bananas Foster flavor really comes alive.

4. Assemble and layer

Spoon the chilled pudding into jars or bowls, then top with warm bananas and extra sauce from the pan.

Finish with toasted pistachios for crunch.

HELPFUL NOTES

  • Full-fat coconut milk gives the pudding its rich, creamy texture.
  • Browning the butter slightly before adding the maple syrup and brown sugar creates a richer caramel flavor.
  • Don’t skip the salt. It balances the sweetness and makes the flavors pop.
  • Let the bananas cool slightly before topping so the pudding stays thick and creamy.
  • Chia pudding thickens more as it sits, especially overnight.
  • For the best texture, whisk the chia pudding twice during the first 5 minutes to prevent clumping.
  • If your pudding feels too loose, stir in 1 more teaspoon chia seeds and chill another 30–60 minutes.

FAQ

It likely needs more chill time. Chia pudding continues to thicken as it sits. If needed, stir in 1 additional teaspoon of chia seeds and refrigerate again.

Yes. Coconut milk gives the creamiest result, but almond, soy, or cashew milk work well too.

Definitely. Prepare the chia pudding the night before, then make the bananas fresh in the morning.

Yes. The pudding is meant to be served chilled, but the warm bananas create a delicious contrast. You can also chill the bananas completely if preferred.

Not at all. It adds a classic Bananas Foster-inspired flavor, but the recipe is still delicious without it.

Absolutely. The warm bananas create a nice contrast with the chilled chia pudding, but you can chill the bananas too if you prefer everything cold.

MAKE IT WORK

  • Dairy-free: Use coconut oil or vegan butter and coconut milk instead of heavy cream
  • Gluten-free: Naturally gluten-free
  • Nut-free: Skip the pistachios or use sunflower seeds instead
  • Sweeter option: Add an extra drizzle of maple syrup before serving
  • Lower coconut flavor: Replace part of the coconut milk with your favorite non-dairy milk

MEAL PREP TIP

Make the chia pudding up to several days ahead and portion it into individual jars or containers. Then all you need to do in the morning is caramelize the bananas and add the toppings. For regular weekday meal prep, you can also skip the caramelized bananas entirely and top the coconut chia pudding with fresh banana and granola. But if it’s Saturday morning? Make the bananas. 😂

STORAGE

  • Store the chia pudding in an airtight container in the refrigerator for up to 4 days.
  • The bananas are best fresh, but can be refrigerated for 1–2 days and gently reheated.
  • For meal prep, store the pudding and bananas separately and assemble before serving.

FROM MY PANTRY

Chia Seeds: Chia seeds are one of my favorite ingredients for make-ahead breakfasts because they thicken the pudding as it chills. They’re also the base for several other chia recipes on the site.
Pure Maple Syrup: Maple syrup sweetens both the pudding and the bananas and works especially well with the cinnamon, vanilla, and coconut flavors.

FROM MY KITCHEN

Small or Medium Skillet: A skillet gives the banana slices enough room to caramelize rather than steam. Keep them mostly in a single layer and turn them gently so they stay intact.
